Cherry tomato, mascarpone and grasshopper sauce
Packed full of fresh basil leaves, this creamy sauce is wonderful poured over fresh pasta and topped with cheese.
- 2 tbsp olive oil
- 15 grasshoppers
- 2 garlic cloves
- 7 oz cherry tomatoes
- 7 oz canned chopped tomatoes
- 2/3 cup mascarpone cheese
- 1 cup heavy cream
- 1 cup basil
- salt and pepper to taste
In a large frying pan, heat the olive oil over a high heat. Once hot, add the grasshoppers, garlic and fresh tomatoes, canned tomatoes and tomato puree and fry for about 5 min until the garlic has browned and the tomatoes are sizzling.
Next, add this mixture to a food processor with the rest of the ingredients and whizz until smooth.
Pour the sauce into a pan over a low heat and bring back to a simmer before serving.
